Celler Sebastià Pastor

 

Viticulture, the cultivation of vines, forms part of the idiosyncrasy of the municipality of Santa Maria del Camí. The Celler Sebastià Pastor, also popularly known as Can Vinagre, with Sebastià and Maria Antònia Pastor, fourth generation at the helm, is a typical Mallorcan family winery, where they have been making and selling wines, in this case, since 1937. It was Sebastià Pastor Mayol, farmer and son of farmers and vineyard lover, who started making wine from grapes grown in his own vineyards.

Sebastià Pastor has the status of master craftsman. Since 2005, the winery has belonged to the Binissalem Mallorca Denomination of Origin. The building, in the old quarter of Santa Maria, is listed and protected from urban planning. It consists of a small cellar built in the 18th century and modernised, where wine is sold and has a tasting area, and another space where quality wines are made and aged. You can also buy wine in bulk in the shop. The vineyards grow on the outskirts of the village, in Pla de Buc and Es Torrent Fals. An ancestral viticulture is practised and the local grape varieties Mantonegro, Callet and Prensal Blanc or Moll have always been the ones that make the difference: the native varieties Mantonegro, Callet and Prensal Blanc or Moll. In 2000, Sebastià Pastor Sureda decided to build a new winery on the outskirts of the village, with more space and better infrastructures.

Celler Sebastià Pastor’s commitment to the village should also be highlighted, with the organisation of social and cultural activities that arouse considerable interest. Likewise, another tradition that continues in the winery and which is always present at Christmas in Santa Maria is the production of the famous almond milk, a traditional drink that originated in the convent of the Friars Minor in 1682.
