Forn Nou

 

It is recorded that this bakery has been open in Binissalem since 1729. The name of the establishment comes from Carrer Nou, which is where the entrance used to be. As a curiosity, it is worth mentioning that the people of Binissalem maintain the saying ‘és més vell que el Forn Nou’ (It’s older than the Forn Nou), which affirms the age of this bakery. Many generations of binissalamers and binissalameres have gone there both to buy and to bake their meals, as in the past not everyone had a large oven at home to do so, especially on special dates and holidays.

It was in 1918 when Bernat Carbonell Mora, who had worked at Forn de Can Joan de s’Aigo, and his wife bought the business, starting the saga that has given continuity to the bakery activity. Around 1935, the business was taken over by Bernat’s daughter, Maria Carbonell Pallisser and her husband Jaume Reus Esteva. From 1962 they were succeeded by one of their sons, Jaume Reus Carbonell, and his wife Margalida Adrover Fiol until 2021. Today Jaume Reus Adrover, their son, and his wife Margalida Serra Capó, are the fourth generation of the family to run Forn Nou.

Around 1920, the street was widened and the façade was demolished, which is why no heritage elements have been preserved. In addition, the interior of the establishment has recently been refurbished, incorporating an area with tables to enjoy its products. The bakery has remained the same, conserving the wood-fired oven, which is more than fifty years old, although it has been adapted to run on gas oil. One of the peculiarities of this very old oven is that it can never stand still.

They are members of the brand ‘Pa d’Aquí. Forn i Tradició’ brand, which distinguishes the establishments with a bakery that make the different types of bread from the Balearic Islands. They specialise in making bread, ensaimadas, panades, cakes and other types of traditional pastries from our land.
