Pastisseria Can Pons

 

The history of the Can Pons bakery begins in 1931 with the Pons Mascaró family, whose members, after setting up a mill to grind wheat, started making bread in the village of Es Mercadal. The business was passed down from father to son for three generations until 2000, when Pedro Pons Florit and Esperança Pons Pons, who ran the business at that time, handed over the oven to Tolo Pons Salord and Maria José Vinent Millán, the current owners, who have no links with the founding family, with whom they share the same surname.

It is an artisanal, traditional, family-run bakery dedicated to baking bread and typical products from Menorca and the Balearic Islands. It has the master artisan’s certificate for pastry, nougat and chocolate, as well as the artisanal qualification document for artisan companies.

One of the specialities of Can Pons are the ensaimadas, proof of which is the award obtained in the Best Ensaimada in the World 2020 competition, but they also make artisan bread, all kinds of typical Menorcan savoury and sweet pastries, and patisserie products of all kinds. From 1994 to 1997, Tolo Pons studied at the Escuela de Pastelería del Gremio (Guild Pastry School) in Barcelona and has been awarded several prizes at the Spanish Championship, such as the Silver Medal for cake decoration and the Bronze Medal for artistic sugar pieces.

Tolo and Maria José have continued with the business with the same affection and dedication, as well as a clear commitment to fresh, artisan products, with top-quality, local and environmentally friendly raw materials. They continue with the oldest and most traditional recipes that they have collected all these years. At the same time, they are always at the forefront of technology, and since 2010 Can Pons has been dedicated to online commerce, selling their products through the web to make them available all over Spain. This initiative led them to win the 2012 Young Entrepreneurs of Menorca award.

The building where the bakery is located dates back to 1896 and is currently one of the oldest in Es Mercadal. They also keep the counter where they used to dispense bread, as well as some of the old equipment and machines they used to make bread with, one of which is still in use.
